Reinhold Carle and Herbert Schmidt from the University of Hohenheim in southern Germany have been long studied E. coli bacteria. By infecting lettuce and greens, they try to figure out what conditions allow the microbe to flourish, and what kills it.Their aim is to stop deadly mutant strains from spreading. The two researchers are currently developing a new method of washing fresh vegetables that will keep the produce clean and free of harmful bacteria. Preliminary tests show that their washing procedure almost completely gets rid of it.
