Raza Naqvi, Washington: Western food is nothing like South Asian food. It has a different taste, a different aesthetic. But this wasn't always the case. Susan Pinkard, a Georgetown University professor, has written a book detailing the evolution of modern Western (read French) cuisine. Though, French cuisine emphasizes natural tastes and minimal spice, it used to be quite the opposite. Raza Naqvi spoke with Dr. Pinkard, as well as with Chefs from a Pakistani and a French restaurant, and asked them about difference between eastern and western cooking.
